Overview
What's great about bamboo in general is that it is a rapidly growing grass. Opposed to cutting down trees, which take years to re-grow, bamboo can be continually harvested as an ecologically attractive alternative.
Bamboo absorbs very little moisture and will not shrink or swell. Surprisingly, it is also harder that most woods, making it a superior material for use in cutting boards.
