The Heat Test
First, we popped some toasted ravioli (t-ravs, for short) and pizza bagels in the oven and put them onto two trays. What we found is that the Thermal Tray definitely stays warm to the touch for hours and clearly maintains a 10 degree difference.

The Cool Test
Our next test involved cream puffs and mini eclairs. That was a tasty test.
We used the Thermal Hot/Cold Serving Tray as well as a metal serving tray to see if the gel insert inside the Thermal Hot/Cold Serving provided additional cooling power.

Bottom line: The Hot/Cold Serving Tray definitely works. Is it as effective as a warming lamp or a fridge? Of course not. The whole point of the product is to slow down the speed at which your appetizers or desserts return to room temperature. In that regard, the Hot/Cold Serving Tray is a winner. Q: If one wants to dress up the tray a bit by putting a paper doily on the surface prior to placing the food on it, will it appreciatively affect the function of the tray? Add or detract? thanks.
A: The manufacturer says that it is better not to put anything between the tray and the food, as it would detract from both the warming and cooling functions.

Q: After heating the tray can you handle it to serve around without an oven mitt? Or will it be too hot?
A: This depends on how hot the tray is as well as your tolerance for warmth. However, we suggest using an oven mitt or heat-resistant cloth when handling the Thermal Hot/Cold Serving Tray.

Q: Will this stay cool/warm enough to safely keep seafood or meats at a safe temperature?
A: That's largely dependent on the environment, the amount of time you're talking about, and how you place the tray. If you cover it completely with hot appetizers and place it on a thick table, it's definitely going to retain heat for longer than if you placed just a few warm pieces on it and places it on a serving cart or something that would allow greater airflow around the tray. Until you get a good feel for the amount of time you can expect for a given situation, we recommend that you check in on your food periodically to ensure that it's still at a good temperature. If you need it to stay warm or cool for a longer period of time, just stick it back in the oven or freezer for a bit, or have a second tray ready in the wings for a quick transfer when the time comes.

Q: How long does the cold tray keep cold.
A: This depends a lot on the circumstances, such as the temperature of the food when placed on the tray and where you set the tray. For example, if you cover the tray with very cold items and keep it indoors, it will definitely keep the items cooler longer than it would if you placed a few lightly cooled foods on the tray and kept it outside on a warm day. We suggest checking in on your food items every so often to ensure they are staying as cool as you'd like them to.

A: No, the Thermal Hot/Cold Tray is made to only perform one of those functions at a time. It can either be hot or it can be cold, but not both at once.
