Astronaut Ice Cream tastes good. Really good, in fact! Being freeze-dried, it certainly has a bit of a different consistency than regular ice cream. However, all of the flavor comes rushing back into the dessert as soon as you bite into it.

Question: Hasn't this stuff been around forever?

Answer: Freeze-dried space food has been used since the days of the Mercury Missions (1959-1963) and has been a mainstay on manned NASA missions ever since. So, it's safe to say that this technology is "tried and true". However, only recently has it been applied to ice cream sandwiches and mini ice cream drops (think freeze-dried Dippin' Dots).

Question: Are these cold? Do they need to be kept in the freezer?

Answer: Nope! Astronaut Ice Cream is freeze dried, which means that they're completely dehydrated (and feel a bit like a cracker) and can be stored at room temperature indefinitely.

They were used on exactly one space flight (Apollo 7). It was made to order and is still available to modern astronauts, but most do not request it because it has a tendency to crumble and float around.

Only in shape. Dippin Dots are flash frozen and need to be kept cold, whereas AstroRox are freeze-dried and do not need to be kept cold.

Yes, it's really ice cream. The only difference is that all of the moisture has been removed.

Do you think in the future Vat19 could make something that can freeze-dry my favorite ice cream and sherbet?
We're not a manufacturer, so unfortunately we can't actually make anything, but if we see anything like that we'll be sure to check it out!

That being said, freeze-drying is actually something you can do at home if you have the proper equipment. The trouble is that it's a fairly large and involved process, so simplifying it down to a consumer level device might be pretty difficult.

Joking aside, you can do that, but you wouldn't be able to store it for very long. Once they're exposed to air they will begin absorbing ambient humidity, causing them to become soft over the next day or so.
Is it veg?
I suppose it depends on how strict of a vegetarian you are. These are regular ice cream sandwiches which have simply been freeze-dried, so they still contain all the animal products (namely milk) that you will find in store-bought ice cream sandwiches.

What would happen if you tried to heat it up in the microwave?
The same thing that would happen if you put a cracker in the microwave -- not much. Microwaves work by using electromagnetic waves to excite the water molecules in your food, causing them to rapidly vibrate and thereby create heat. Since Astronaut Ice Cream is freeze dried, microwaving it will not cause it to get very hot.

I'm not sure if I know what you mean by your second question but I'm going to take a guess and assume it's referring to previous questions that say this was never taken into space. Unfortunately those comments are missing the point.

Even though it was never used on an actual space mission, Astronaut Ice Cream was developed specifically for that purpose. Ice cream developed for astronauts is, by definition, astronaut ice cream. It doesn't matter if it made it into space or not.

The first question is a little easier to answer. The reason it doesn't melt is because it's not cold to begin with. Astronaut Ice Cream is freeze dried, which means that all of the moisture has been sucked out of it. This process leaves behind the crystalline lattice of sugars and proteins that was created when it was frozen. Once it gets wet however it will melt almost instantly. It's why bouillon cubes, which originally started as liquids, are perfectly solid until they come into contact with water again.

Shouldn't freeze dried stuff have an infinite shelf life?
Not necessarily. While freeze dried products do have exceptionally long shelf lives, it will depend largely on what has been freeze dried and how it is being stored. Over a period of months or even years, moisture in the form of humidity can find its way into the packaging and cause the ice cream to partially rehydrate, making it soft and unpleasant. It's similar to how Nilla Wafers and other baked goods get soft and gross when left out despite being completely dehydrated.

Do astronauts actually eat this or is it just like what their food is like?
Dehydrated foods, such as these ice creams, were initially developed for the Apollo program, however they were not used for very long because the crumbly nature of the foods proved to be messy in a zero gravity environment.
What's a business day?
A business day is the amount of time that a business is open on a particular day. In our case, it's Monday through Friday, 8:30am to 5:30pm Central Time.
If they are left open for a while can it spoil?
They'll become soggy and unpleasant long before they spoil. They're just small ice cream sandwiches that can be finished in a single sitting, so we can't imagine any situation where one would be opened and left out for any great length of time.

The cookies are far more likely to break simply because they have more surface area. It's almost certain that they will arrive with some degree of cracking, but that doesn't take away from the experience!

No and.. not really. Imagine a cracker fresh out of the fridge. It'd be slightly cold to the touch, but with no moisture to hold heat it would not be any different than if it were at room temperature. The same logic applies here. You can attempt to rehydrate the ice cream and make some sort of milkshake, but I think all you'll end up with is a disappointing whey-like concoction.

Neither. They are freeze-dried Neapolitan ice cream drops.

The Astrorox are more labor intensive to make and package than the sandwiches.

I haven't tried either of those brands, but the process of freeze-drying is pretty much the same across the board. Vanilla ice cream freeze-dried at one location will probably be very similar to ice cream freeze-dried at another.

Astronaut Ice Cream is not frozen, therefore it cannot melt. You do NOT need to worry about it ever melting as a result of temperature. Moisture, on the other hand, will cause them to melt.

1) That was actually the manufacturer's decision, not ours. 2) Astronaut Ice Cream does contain soy, so if you have a serious allergy you should probably avoid it. 3) By dehydrating tiny balls of ice cream!

Yes, but please bear in mind that the FDA doesn't approve every single snack and food on the market. FDA approval usually applies to prepared foods, pharmaceuticals, and things like that. The FDA usually approves the sources of the ingredients rather than the final product.

Simply put, all of the moisture is sucked out of it. It's a relatively complex process, but there are videos on YouTube which show how freeze drying is accomplished.
